Pancakes in wine chateau
While in Tara, most of the days we had
lunch or dinner at restaurant Javor. They serve traditional Serbian food, which
I love and miss so. I cook Serbian food a lot but since the quality of the
ingredients is not the same, mostly because there is not enough sunshine in
Sweden, it rarely ends up tasting like it should. Now, about what I actually wanted
to talk about-these pankaces. OMG!!! They were the best pancakes in wine
chateau I have ever tried. With a big smile on my face I did thank the chef for
the experience. :D They were perfect-sweet but just enough, plenty of walnuts, a
slight hint of alcohol and covered in that beautiful light yellow foam. I have
to try and recreate them!

Views like these
Those couple of days we have spent
on Tara mountain were magical. Most of the time we were driving literally through
the woods. Above us the treetops were so dense, instead of blue skies there were
all the shades of orange, red, yellow and green, overlapping each other. For kilometres
at the time there was no sign of civilisation. And then there were views like
these.

Chia, clementine and lemon drink
My newest obsession. And it’s a
healthy one! Can you believe it?! Me-barely. :D I don’t know what it is but I
just love the consistency of chia seeds in my mouth. Yummy!
Ingredients for 1
15gr or 1,5tbsp chia seeds
2-3dl water
1 Lemon
3-4 Clementines
1tbsp honey, optional
Process
Place chia seeds in a bowl and add
water just enough to cover them. Using a spoon, mix until all the water is
absorbed and consistency is gelatine like. Repeat the process two more times. Leave
on a side for around 30 minutes so that consistency becomes even more gelatinous.
Wash and cut the fruit in halves,
then squeeze the juice out of it.
In a tall, 500ml glass, add the chia
seeds, fruit juice and honey, mix well.
