Poached egg, avocado and truffle oil sandwich


As you can see from the recipes I post I love desserts, pasta…so this one is a surprisingly healthy one! I’m impressed with myself! :D It also looks good with barely any effort! 


Ingredients for 2


2 slices of wholegrain bread
1 avocado
2 eggs
Salt
Pepper
A drizzle of truffle oil



Process


Mush the avocado and spread it over the two slices of bread.
Crack the eggs and put each into a separate cup or a bowl.
Fill a large pot up to 1/3-1/2 with water and bring to a point just before boiling. If you have fresh eggs skip the next step but if you don’t swirl the water with a spoon and then drop the eggs in to the water separately. After 3 minutes of cooking on the same heat, remove the eggs.
Place the eggs over the avocado, season and drizzle with some truffle oil.
