Boiled whole fish




This was my fathers staple dish. I try to make it every week because it is delicious but also healthy and it’s done in about 30min. He was serving it with roasted potatoes and onions, boiled greens and a fresh salad. Sometimes I replace the potatoes with some good bread. Because I like to eat the fish with my hands and get my fingers dirty, bread makes more sense. Also, with the water and the vegetables where the fish was cooked you can make a great fish soup. I will be posting that recipe soon!





Ingredients for 4


2 big tomatoes or 10-15 cherry tomatoes
1 big yellow onion
1-2 celery stalk
400-500gr Witch Flounder
400-500gr Seabass
2-3l water
salt
pepper
2tbsp+3tbsp olive oil
3-4 garlic cloves
A small bunch of parsley









Process

In a large pot place water, whole tomatoes, onion and celery cut in big chunks, salt and 2tbsp of olive oil and bring to a boil. Once it is boiling reduce the heat and simmer for around 10min.
In the meantime, prepare the fish-scrape the scales, remove the insides and the gills then wash well.
Add the fish to the cooking vegetables. If there is not enough water to cover the fish add some more. Bring the heat up until the water starts to boil again then reduce the heat to medium and simmer for around 10-15min.
In the meantime, combine finely chopped garlic, parsley, a pinch of salt and pepper with 3tbsp of olive oil.
Transfer the whole fish to the serving plate and drizzle over with the spice and olive oil mixture.

Serve immediately!
