Chicken with vegetables and polenta





Ingredients for 4

3 garlic cloves
½ chilli
500gr cherry tomatoes
500gr brown mushrooms
Parsley
4 chicken breasts
Splash of white vine
Olive oil
10 olives
200-300ml stock
Salt
Pepper
Polenta




Process
 
Season the chicken. Cut the tomatoes, the olives and the mushrooms in halves/quarters, finely chop parsley, garlic and chilli. Prepare the stock.
In a pan with high sides heat up some olive oil, sear the chicken until it gets some colour. Add a splash of vine in the end and let it evaporate. Remove the chicken from the pan.
In the same pan add some more olive oil and add garlic, chilli, olives, tomato, mushrooms, parsley. Add stock, season. Put the chicken on top of the vegetables. Turn the heat to low, cover with the lid and cook for around 20min.
Cook the polenta and serve.
