Beetroot salad




Ingredients for 4
7-9 beetroots
2 cloves of garlic, optional
1/2tsp sugar
1tsp salt
Pinch of cumin seeds
½-1tbsp vinegar
3-4tbsp olive oil




Process
Wash beetroots and place in a pot with water submerging them. Bring to the boil and cook for around 1 hour or until beetroots are soft.
While hot, remove the skin and slice into thin slices.
Sprinkle over cumin, sugar, salt, olive oil, vinegar and finely chopped garlic. Mix carefully as it tends to crumble.
