Lasagne alla bolognese




Ingredients for 6


Lasagne x 9 or more depending on the size of the dish
400gr mixed pork and beef minced meet
1 yellow onion
400gr tomato passata
1 can mushrooms, optional
1-2dl stock
Thyme
Salt
Pepper
Olive oil

For the béchamel sauce

2tbsp butter
3tbsp flour
8dl milk
3dl grated cheese
Salt
Pepper
Nutmeg




Process


In a pan with high sides, on medium heat, heat up some olive oil then add the finely chopped onion and sweat until soft and translucent.
Add the meat and cook until cooked through. Add the passata, mushrooms, stock and seasoning.
In a pan with high sides, on medium heat, melt butter then add the flour and mix around until there are no lumps and it gets some colour. Add the milk, grating of nutmeg and the seasoning. Bring to a boil while mixing constantly and once it’s up to a boil cook for additional 4 min. It should become thick with no lumps. Remove from the heat, mix in the cheese.
Cover the bottom of the oven dish with some béchamel sauce then layer 3 lasagne next to each other, cover those with a third of the béchamel sauce and half of the meat sauce, repeat and finish with the third layer of lasagne, then cover those with the rest of the béchamel sauce.
Bake on 225 ° for 45min. You might need to cover the dish with the aluminium foil after around 30min if the lasagne get enough colour.
