Grandma’s apple pie



Sorry for the late post today. I like when I have a post ready and scheduled for the next day but these days I seem not to be able to get it together. 



Another recipe from my grandma’s kitchen. I want this so bad now! Buttery sweet dough with juicy sour apple filling! Mmmm I have recipe for the same pie except with cherries which you can check out here!




Ingredients


250gr soft butter
170gr+70gr sugar
2 eggs
1 tsp baking powder
2 tsp vanilla sugar
2 tbsp sour cream
400gr cake flour
7 apples, any sort but best sour ones (Granny Smith)
1tsp cinnamon
3tbsp ground walnuts
Couple of tbsp icing sugar







Process


Turn on the oven to 175°.
Oil/butter and flour the baking dish.
Grate the apples and mix with the cinnamon and almost all of the walnuts.
Mix the 2 egg whites with 70gr of sugar until fluffy. Add to the apples.
Mix the butter with the 170gr sugar until combined, ca 5-6min. Add the egg yolks, sour cream, vanilla sugar and the baking powder mixing well after each addition. Mix in the flour first with the wooden spoon then knead using hands until the dough is no longer sticky. Add more flour if needed, the dough should be soft.
Cover the bottom of the baking dish with the half of the dough. Use hands or rolling pin. Make a few holes with a fork.
Spread the filling over the dough. Sprinkle over a thin layer of walnuts.
Grate or roll out the other half of the dough and cover the filling. Make a few holes with a fork.
Bake for around 50min or until the pie is golden brown.
Sift icing sugar over the cooled pie then cut in pieces.
