White soup


This is an old family recipe. It is my grandfathers sisters recipe! I remember how much I loved this soup when I was little, I was around 5 or 6 years old. Back then we lived in Croatia and I don’t remember much from that period but I do remember this soup. I make it myself from time to time but it tastes the best when my grandma makes it. So here is the recipe!



Ingredients


250gr cottage cheese
2dl Creme fresh+for the cheese mixture if needed
2 egg
1 yellow onion
1l water
3tbsp flour
4tbsp semolina
Olive oil
Salt



Process


Cut the onion finely then sauté it on a little olive oil and water.
When the onion is soft and see through add the water, salt. Bring to a boil.
Meanwhile, on a plate mash the cheese with a fork, if it’s too hard add some crème fresh, if it’s not salty add some salt.
On a different plate beat egg whites with a clean fork until fluffy. Add them to the cheese along with the egg yolks.
Into the cheese and egg mixture add the flour and the semolina gradually, 2-3 stages. The final mixture should be firm but not hard.
Using a small spoon add the dumplings into the boiling water and cook until they are cooked through, around 10min. After adding he dumplings bring the heat to a medium-high, the soup should still boil just not as much.
In a small bowl mix the crème fresh with some of the soup liquid then add that to a boiling soup. Turn the heat to a high and when it starts to boil again turn it off. Serve!
