This is one of my favourite vegetarian recipes, so easy to do and
perfect after all the heavy Christmas food!
Ingredients for 4
2tbsp olive oil
1 yellow onion
2 garlic cloves
1 chilli pepper
4tbsp tomato pure
4dl lentils
1 stock cube
1l of water
1tsp cumin powder
1 bay leaf
For the zesty yoghurt
2dl greek yoghurt
1 clove of garlic
1tsp lemon juice
1tsp lemon zest
Process
I a large pot heat up some olive oil then add finely chopped onion,
garlic and chilli. Sauté until soft and translucent.
Add the tomato pure and stir for a minute or two. Then add the rest of
the ingredients, bring up to a boil, then reduce the heat to medium and let
cook partially covered for 20min.
For the yoghurt part you can make it easy and just mix everything
together.
Before
I did that I let it hang in a muslin cloth for a while so it ended up really
thick in consistency.
Serve the lentils with a click of that fragrant yoghurt and enjoy!
