For
her birthday Ana requested her favourite chocolate cupcakes. This is the best
recipe I’ve tried so far! The cake part is rich and the frosting is buttery
sweet and easy to work with.
Ingredients
for the cake part

cup (52gr) unsalted room temperature butter
1
cup (128gr) sugar
2
ounces (56gr) dark chocolate
2
eggs
2
egg yolks
½
cup (170gr)+1tbsp oil
2tsp
vanilla extract
1/3
cup (113gr) sour cream
1
cup (136gr) all purpose flour
½
tsp salt
1/2
tsp baking soda
½
cup (64gr) cocoa powder
½
cup (170gr) room temperature water
Proces
Preheat
the oven to 175°.
Mix sugar and butter until combined, it
should look like wet sand in the end.
Melt the chocolate and let cool until
finger warm then add it to the sugar and butter mixture and combine.
Mix in the eggs and the yolks one at the
time until just combined.
Mix in oil, vanilla and sour cream until
just combined.
Sift together flour, salt, baking powder
and cocoa powder then mix with the fork. Add to wet mixture in three additions
mixing until just combined.
Mix in water until just combined.
Fill the cupcakes forms until 2/3 full
then bake. Check after 18min, if the toothpick comes out clean take them out
and cool.
Ingredients for the frosting
180gr room temperature cream
cheese
80gr room temperature unsalted
butter
430gr sifter powdered sugar
80gr cocoa powder
Poces
Mix cream cheese and butter until smooth.
Mix in powdered sugar one cup at the time.
Min in cocoa powder.
Pipe the frosting on to the cakes.
