The Monster

Reminiscing some more-now watching old movies. This movie I saw with my dad and I remember us screaming and crying of laughter! We saw it the night before he passed away and this maybe sounds weird, but I am so glad that we did because that is one of the dearest and the happiest memories I have of him.

The movie is about a guy who is accused of being a serial killer that kills women. Of course, Benigni is brilliant in the leading role. He is natural and very charming, a true actor.

This movie is even funnier after you have seen it once and know from the beginning who they are talking about as a prime suspect. Every time I’m watching it I just start literally screaming of laughter from the very beginning. It’s one of my top 5 movies of all time! Love it!

Parmigiana di melanzane

Ingredients for 4

1 yellow onion
1 clove of garlic
500gr cherry tomatoes
1tbsp dried Oregano
A bunch of Basil
1/2dl grated Parmesan cheese
2 Mozzarella
2 aubergine
Olive oil
Salt

Process

Finely chop the onion and the garlic. Cut the tomatoes in half, the aubergine in thin slices and the Mozzarella in stripes.
In a pan with high sides, heat up some olive oil then add the onion, the garlic and the oregano. Sauté until the onion gets transparent. Add the tomatoes and the Basil and continue cooking on medium heat until the sauce thickens-around 15min.
Meanwhile, lightly brush the aubergine slices with some olive oil and grill them on a grill pan until they get a bit softer.
Salt each grilled aubergine slice and place over a bit of Mozzarella cheese and a Basil leaf then roll tightly.
Cover the bottom of an oven dish with the tomato sauce and place all the aubergine rolls on top of it, making one row. Place more tomato sauce over the aubergine rolls along with some Mozzarella and grated Parmesan.
Bake on 200 ° for around 15min.
Before serving grate over more Parmesan and enjoy!
