Spinach lasagne


It’s been a long time since I posted a pasta recipe and here is a good one. One of my childhood favourites, the one my dad was making often. 



Ingredients for 6


500gr spinach
3dl creme fresh (gräddfil, pavlaka)
3dl cottage cheese
2tbsp butter
4tbsp flour
8dl milk
3dl grated cheese
Salt
Pepper
½ nutmeg
12 lasagne sheets



Process


In a large sauce pan, on medium heat, melt the butter then add flour and stir constantly until they are all combined and develop light brown colour. This takes around 1-2min. Add the milk, turn the heat up to medium-high until it starts to boil then cook for 4 minutes. Keep stirring all the time. Remove from the stove and add in the grated cheese, salt, pepper and nutmeg.
Wash the spinach and blanche it just until it wilts then strain and squeeze out as much water as possible.
Combine the blanched spinach with crème fresh, cottage cheese, a ladle of béchamel sauce, salt and pepper.
Cover bottom of an oven pan with some béchamel sauce. Layer first layer of lasagne sheets in three rows, cover those with a thin layer of béchamel and a third of the spinach mixture. Place over second layer of lasagne sheets and repeat the process two times more. Finish with a layer of lasagne sheets and a thin layer of béchamel.
Bake on 180C for around 40min or until golden brown.
