Apple cinnamon muffins and apple picking



Apples are still in season and I finally have some time to post this recipe! These pictures were taken a couple of weeks ago when the evenings were still warm and perfect for apple picking. In Sweden there are apple trees everywhere, which kind of is heaven for me. I love apples, especially the kind that is more sour than sweet and juicy. I made these muffins the morning after and the whole day I enjoyed in taste and smell of apples and cinnamon.




Ingredients for 12 muffins


4,5dl+2tbsp flour
1 ½ tsp baking powder
½ tsp salt
2tsp ground cinnamon
4,5dl apple chunks
113gr unsalted butter at room temperature
2,25dl caster sugar
2 eggs
1 vanilla
1,1dl milk

For the topping

56gr butter
4tbsp caster sugar
4tsp ground cinnamon



Process

Preheat the oven to 190 °. Line a muffin tin with store bought paper cups or make your own by cutting the baking sheet into 12 squares and form a cup with each sheet.
Sift together flour, baking powder, salt and cinnamon.
Dice the apples into little chunks and combine with 2 tbsp of flour.
In a large bowl, mix together butter and sugar until the butter becomes pale in colour. Add egg, one at a time, mix in well before adding the second. Mix in vanilla.
Gently fold in flour mixture, alternating with milk. Stir just until combined. Fold in dices apples.
Scoop mixture into prepared muffin tins, up to ¾ full.
Bake for around 30min or until a toothpick inserted in the middle comes out clean.
While the muffins are baking melt the butter in one bowl and in another, combine sugar and cinnamon.
When the muffins are baked, allow them to cool slightly then brush the top of each with some melted butter and finally sprinkle over with the cinnamon and sugar mixture.
