Ingredients
for 4
4 chicken
drumsticks
1 carrot
1 parsley
root
3 yellow
onions
Olive oil
4dl rice
Stock cube
Salt
Pepper
Process
Place
chicken in a pot, add ½ onion, parsley root, carrot, cover with water and cook
until cooked through.
Finely
slice 2,5 onions and fry on a little olive oil until soft. Mix in the rice and add
2 ladles of water where chicken cooked. Add the stock cube, salt and pepper.
Cut the
cooked parsley root and the carrot into pieces.
Cover
bottom of the oven tray with rice and onion mixture, pieces of parsley root and
carrot. Cover with water where chicken cooked until all of the rice is
submerged, then place the chicken drumsticks over.
Bake at 200° for 20-30min or until the rice is cooked through.
Serve with
beetroot salad, pickles or fresh green salad!
