Tomato soup with dumplings


Ingredients for 4


500gr tomato passata
500gr water
1 onion, optional
½ tsp sugar
1 egg
Couple of tbsp. of semolina
Salt


Proces


In a pot, combine passata, water and thinly sliced onion. Let it come to a boil.
When it starts to boil, reduce the heat to medium and add the sugar. Cook on medium for ca 10min.
Turn the heat to up and let it come to a boil again. During that time, separate the egg white from the yolk. Beat the egg white with a pinch of salt until fluffy, add the yolk and combine the two. Add as much or as little semolina, depending on how hard noodles you want.
Using the spoon, start adding the noodles in to the boiling soup. When all the noodles are in, cook for additional 10min. During that time adjust the seasoning.
