Cherry cake with rich chocolate glaze


This was my all time favourite cake growing up. Original recipe says to serve covered with powdered sugar but ever since we tried it with the chocolate glaze there was no turning back :D You have to try it out! Just use good sour cherries for that lovely combination of sweet and sour.

















Cherry cake

Ingredients

500gr sour cherries, fresh and depitted, if frozen leave them in a strainer to get to room temp
Juice of the cherries ca 1dl
2 eggs
2,5dl sugar
2dl yogurt
2dl oil
6dl flour
2 tsp vanilla sugar
2 tsp baking powder
Knob of butter, flour and some breadcrumbs (optional) for the baking tray



Proces

In a bowl combine flour and baking powder.
Grease the baking tray with some butter and cover it with thin a layer of flour. Optional-sprinkle thin layer of breadcrumbs to really ensure cake won’t stick to the tray.
In a separate bowl mix eggs, sugar and vanilla sugar until all the sugar crystals are gone. Then add yogurt, oil and flour. Fold in the cherries and the juice, gently so they don’t break.
Preheat the oven at 180 ° and bake for around 45min. It should be light brown in the end and if you check with a toothpick it should come out clean.
You can cover the cake with some powdered sugar or with the chocolate glaze.




Rich chocolate glaze

Ingredients

100gr jam/marmalade, preferably apricot
1tbsp oil
100gr sugar
50gr dark chocolate
2tbsp milk
Knob of butter



Proces

Mix all of the ingredients together over medium heat until they are combined.
