This is my mamas recipe for delicious vegetable soup. We make it with
vegetables that we
have on hand or the ones that are in season. Now asparagus is
in season and I love it
cooked, grilled and in soup. It makes difference cooking fresh instead of
frozen, the texture is
almost silky smooth-no cream needed :)

Ingredients
1 onion
4 carrots
3 potatoes
2-3 garlic
cloves
2 bunch of
asparagus ca 1/2kg
Salt
Pepper
Dried parsley
Stock cube
or dried vegetables and herbs
Olive oil
Proces
Cut in pieces
potatoes, onion, carrots and asparagus.
In cooking
pan place potatoes, onion and carrots, just cover with cold water, bring to a
boil the cook until vegetables are starting to get soft ca 15min.
Add asparagus
and garlic than cook until it softens ca 10min.
Remove the
pan from the heat and mix everything with electric mixer or in a juicer until
desired consistency.
Add more
warm water if consistency is too thick.
Season with
salt, pepper, stock cube and dried parsley.
Bring to a
boil and adjust seasoning if needed.
Serve!
