Greek





Tzatziki

Greek yogurt 1kg
1 cucumber
2 cloves of garlic
Salt
Pepper
Olive oil
Olives

Place yogurt in a muslin cloth, hang it in the fridge allowing it to drip away access fluid for at least a couple of hours.
Grate cucumber and garlic, sprinkle some salt, then leave it in a strainer, place a heavy plate over and leave for at least a couple of hours.
Combine yogurt, cucumber, more salt if needed, pepper and place in serving bowl. Decorate with some olive oil and olives.
Serve cold!




New potatoes

500gr new potatoes
2 cloves of garlic
Salt
Pepper
Oil

Rinse the potatoes under running water with a clean washing sponge. Some skin will fall off but not all of it. If small leave them whole, if big cut them into halves or quarters.
Place potatoes in cold water, bring to a boil then cook for 10min. Drain well.
In a pan heat up some oil, add the potatoes, salt, pepper and panfry for around 10-20min or until they are golden brown. Add garlic towards the end, panfry it until it gets some colour and becomes softer.
Serve hot!




Greek salad

3 tomatoes
1 cucumber
1 red onion
20 olives
100-200gr feta cheese
Oregano
Olive oil

Cut vegetables into pieces, combine.
Place feta cheese on top, sprinkle with some oregano and olive oil.
Serve cold!




Grilled chicken

3 chicken breasts
Grill oil
2 tsp grill spice

In a bowl place chicken, add spice and oil enough so that all the chicken is covered. Leave in the fridge for at least a couple of hours.
On a medium to medium high heat grill the chicken until it's cooked through.
Serve hot!
