Dessert time


One thing I love about serbian spring/summer is fruit and cherries are among my favourites.
I have lived in Sweden for seven years now and I have yet to buy my first cherries there (fresh or frozen) so this was highly anticipated treat! And I indulged!

Grandmother’s lazy pie

200gr soft butter
240gr sugar
2 eggs
1 tsp baking powder
2 tsp vanilla sugar
2 tbsp sour cream
250gr cake flour
800gr-1kg cherries
Couple of tbsp icing sugar

Turn on the oven to 200°.
Oil/butter and flour the baking dish.
Mix butter with half of the sugar until combined, ca 5-6min, then combine with the egg yolks.
Add baking powder, vanilla sugar, sour cream, flour and continue to combine with the wooden spoon or with the hands. Add more flour if needed, the dough should be soft.
Mix egg whites with the other half of the sugar until stiff peaks. Combine with the cherries.
Cover the bottom of the baking dish with the half of the dough by spreading it with the hands.
Spread the filling over the dough.
Grate or roll out the other half of the dough and transfer it over the filling.
Bake for around 30min or until the pie is golden brown.
Sift icing sugar over the cooled pie then cut in pieces.
